I had a lot of pieces of different vegetables left over from this week, red, green, yellow peppers, mushrooms, onion, zucchini and asparagus. So I chopped them up, tossed them with olive oil, salt and pepper and roasted them, not really having any plan on what to do with them when they were done. I could have just eaten them as is but they needed to turn into supper. I ended up mixing them with orzo and chicken thigh meat, sprinkled on a little fontina cheese and it wasn't bad. Forgot to get a picture of that.

I'll bet it was delicious. The caramelized flavor of roasted vegetables is a thing of beauty in my book. Thanks for sharing.
Hi Jaynie-I grill veggies on our bbq in a package of foil. After rinsing different coloured large sweet peppers (yellow,orange,red, and green ones)-I remove center stuff, and then chunk them up.
In a bowl, I mix them with Italian Dressing and marinate for 15 mins.
Grill for just a quick 3 minutes and Presto!! VEGGIES.
YUMMO. I put that on Tasty Kitchen a few weeks ago.
My chili has green olives in it, meat, diced onions, red kidney beans, my roasted tomatoes, tomatoes, chili powder & flour and cheese. Yummy too.

I like this time of year when you can still get fresh veggies from the garden. I know it's the last for the season, but the last are just as good as the first ones of the season. Roasted veggies are so YUMMY!!! in omelets, quiches and I thing best of all in pastas. I love pasta dishes. THANKS!!! for stopping by and visiting. Your always welcome @ heartnsoulcooking.
